Ingredients
- 4 medium-sized potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of milk
- 1/2 cup of heavy cream
- 4 slices of bacon, cooked and crumbled
- 1/2 cup of shredded cheddar cheese
- Salt and pepper to taste
- Chopped chives for garnish

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside for later.

In the same pot, sauté the onion and garlic until they become translucent.

Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender.

Using a blender or immersion blender, puree the soup until smooth. Be careful as it will be hot.
