Instructions

  2. Add mushrooms and cook until they release their moisture and start to brown.

  3. Pour in vegetable broth and add thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.

  4. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.

  5. Season with salt and pepper to taste. Serve hot.
