Ingredients
- 1 cup dried green lentils
- 6 slices bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups chicken or vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the bacon grease in the pot.

Add the onion, carrots, celery, and garlic to the pot. Cook until vegetables are tender, about 5 minutes.

Rinse the lentils under cold water and add them to the pot. Stir to combine.

Pour in the broth and add the bay leaf and thyme. Season with salt and pepper.

Bring the soup to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until lentils are tender.

Remove the bay leaf and stir in the cooked bacon.
