Ingredients
- 1 bunch of kale, stems removed and chopped
- 2 apples, peeled, cored, and chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup water
- 1/2 cup walnuts, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.

Add the chopped apples to the pot and cook for 5 minutes, until they start to soften.

Add the kale to the pot and cook for another 5 minutes, until it wilts.

Pour in the vegetable broth and water. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, until the kale and apples are tender.
