Serves:
Ingredients
- 2 cups dried navy beans, rinsed and sorted
- 1 lb ham, diced
- 1 onion, chopped
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 cups water
- 1 bay leaf
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
-
Place the navy beans, ham, onion, carrots, celery, garlic, chicken broth, water, bay leaf, dried thyme, salt, and black pepper into the Instant Pot.
-
Close the lid and set the vent to sealing position. Cook on high pressure for 60 minutes.
-
Once the cooking time is complete, allow the pressure to release naturally for 15 minutes, then do a quick release to release any remaining pressure.
-
Open the lid and remove the bay leaf.
-
Use a potato masher or immersion blender to partially blend the soup, leaving some beans and vegetables intact for texture.
-
Taste and adjust seasoning if necessary.
-
Serve hot and enjoy!
