Ingredients
- 1 lb lamb stew meat, cut into bite-sized pieces
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 cup pearl barley
- 6 cups beef or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.

In the same pot, add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.

Return the lamb to the pot and add the pearl barley, broth, bay leaf, salt, and pepper. Bring the soup to a boil, then reduce heat and let simmer for 1.5 to 2 hours, until the lamb is tender and the barley is cooked through.

Remove the bay leaf and adjust seasoning if needed.
