Ingredients
- 1 lb turkey breast, cooked and shredded
- 1 cup pearl barley
- 4 cups turkey or chicken broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish

In a large pot, heat some oil over medium heat. Add the diced onion, carrots, and celery. Cook for 5 minutes until vegetables start to soften.

Add the minced garlic, dried thyme, and dried rosemary to the pot. Cook for another 2 minutes until fragrant.

Pour in the turkey or chicken broth and bring to a boil. Add the pearl barley and reduce heat to a simmer. Cook for 45 minutes until barley is tender.

Add the shredded turkey to the pot and season with salt and pepper to taste. Cook for an additional 5 minutes until turkey is heated through.
