- 1 cup dried Great Northern beans, soaked overnight
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish

Drain and rinse the soaked Great Northern beans.

In a large pot, heat the olive oil over medium heat. Add the onions, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

Add the beans, vegetable broth, bay leaf, dried thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
