- 1 whole chicken, cut into pieces
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 tablespoons chopped fresh parsley

In a large pot, combine the chicken, chicken broth, onion, carrots, celery, garlic, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through and tender.

While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine the flour, baking powder, and salt. Gradually add the milk and stir until a soft dough forms.

Once the chicken is cooked, remove it from the pot and shred the meat using two forks. Discard the bones and return the shredded chicken to the pot.

Drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot and cook for 15 minutes, or until the dumplings are cooked through and fluffy.
