  • 2 lbs fresh tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, peeled and sliced
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

  2. Add the diced tomatoes, carrot, vegetable broth, sugar, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes, until the tomatoes and carrots are soft.

  3. Using an immersion blender or regular blender, puree the soup until smooth.

  4. Return the soup to the pot and stir in the fresh basil leaves. Cook for an additional 5 minutes to let the flavors meld together.

  5. Serve hot and enjoy!
