Ingredients

  • 2 cups fresh peas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup lovage leaves, chopped
  • Salt and pepper to taste
  • Optional toppings: sour cream, croutons, and additional lovage leaves for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

  2. Add the fresh peas and vegetable broth to the pot. Bring to a boil, then reduce heat to a simmer and cook for about 10 minutes, or until the peas are tender.

  3. Remove the pot from heat and let it cool slightly. Using an immersion blender or regular blender, puree the soup until smooth.

  4. Return the soup to the pot and stir in the chopped lovage leaves. Season with salt and pepper to taste.

  5. Return the pot to low heat and simmer for another 5 minutes to allow the flavors to meld together.

  6. Serve the soup hot, garnished with sour cream, croutons, and additional lovage leaves if desired.
