- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 cloves of garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 1 tablespoon all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 slices of baguette
- 1 cup grated Gruyere cheese
Instructions

In a large pot, melt the butter over medium heat. Add the onions and cook until golden brown and caramelized, about 30 minutes.

Add the garlic and cook for an additional 2 minutes.

Stir in the flour and cook for 1 minute.

Pour in the red wine and cook for 5 minutes, until reduced by half.

Add the beef broth, sugar, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

Meanwhile, preheat the broiler. Place the baguette slices on a baking sheet and broil until toasted on both sides.

Ladle the soup into four oven-safe bowls. Top each bowl with a slice of baguette and sprinkle with the grated Gruyere cheese.
