How To Make Vegetable and Fish Chowder Recipe
Hearty and flavorful soup loaded with vegetables and tender chunks of fish.
Serves:
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 2 cups chopped potatoes
- 2 cups chopped carrots
- 2 cups chopped celery
- 4 cups vegetable or fish broth
- 1 can diced tomatoes
- 1 lb white fish, chopped into bite-sized pieces
- Salt and pepper, to taste
- 1/4 cup chopped parsley
Instructions

In a large pot over medium heat, heat the olive oil and cook the onions until soft.

Add the garlic, thyme, and oregano and cook for another 30 seconds.

Add the potatoes, carrots, celery, broth, and diced tomatoes and bring to a simmer.

Cook until the vegetables are soft, about 20-25 minutes.

Add the fish and cook until the fish is just cooked through.

Season to taste with salt and pepper and stir in the chopped parsley.

Serve hot.
