Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 8 oz sliced mushrooms
- 2 cups fish stock
- 1 lb white fish (such as cod or halibut), cut into chunks
- 1 cup heavy cream
- 2 tbsp chopped fresh parsley
- salt and pepper, to taste
Instructions

Heat oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

Add mushrooms and cook for another 5 minutes.

Pour in fish stock and bring to a simmer.

Add fish and simmer until cooked through, about 8-10 minutes.

Stir in heavy cream and parsley. Season with salt and pepper, to taste.
