A creamy, flavorful fish chowder with a hint of curry and coconut.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 can (13.5 oz) coconut milk
- 4 cups fish stock
- 1 lb white fish, cut into chunks
- 2 large potatoes, peeled and diced
- Salt and pepper, to taste
- Fresh cilantro, chopped for garnish
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic, cook until softened, about 3 minutes.

Add curry powder and cumin, cook for another minute.

Pour in coconut milk and fish stock, bring to a simmer.

Add fish and potatoes, cook for 10-15 minutes or until the fish is cooked through and the potatoes are tender.

Season with salt and pepper.

Serve hot, garnished with fresh cilantro.
