Ingredients
- 2 fennel bulbs, trimmed and chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- Salt and pepper to taste
- Fresh fennel fronds for garnish
Instructions

In a large pot, heat olive oil over medium heat. Add the chopped fennel, onion, and garlic. Cook until softened, about 5 minutes.

Add the ground cumin and coriander to the pot and stir well to coat the vegetables.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the fennel is tender.
