Ingredients

  • 2 fennel bulbs, trimmed and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • Salt and pepper to taste
  • Fresh fennel fronds for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped fennel, onion, and garlic. Cook until softened, about 5 minutes.

  2. Add the ground cumin and coriander to the pot and stir well to coat the vegetables.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the fennel is tender.

  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  5. Season with salt and pepper to taste and stir well.

  6. Serve the fennel soup hot, garnished with fresh fennel fronds.
