How To Make Roasted Tomato Soup Recipe

Ingredients

  • 1kg tomatoes, halved
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups vegetable broth
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Place the halved tomatoes, chopped onion, and minced garlic in a large bowl.

  3. Drizzle with olive oil and season with basil, oregano, salt, and black pepper. Toss until everything is evenly coated.

  4. Transfer the tomato mixture onto a baking sheet lined with parchment paper.

  5. Roast in the oven for 30 minutes or until the tomatoes are soft and caramelized.

  6. Pour the roasted tomato mixture into a large pot and add the vegetable broth. Bring to a boil, then let it simmer for 10-15 minutes.

  7. Use an immersion blender to blend everything until smooth.

  8. Stir in the heavy cream and let it simmer for another 5 minutes.

  9. Serve and enjoy your delicious Roasted Tomato Soup!
