Ingredients
- 1kg tomatoes, halved
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups vegetable broth
- 1/4 cup heavy cream
Instructions

Preheat your oven to 400°F (200°C).

Place the halved tomatoes, chopped onion, and minced garlic in a large bowl.

Drizzle with olive oil and season with basil, oregano, salt, and black pepper. Toss until everything is evenly coated.

Transfer the tomato mixture onto a baking sheet lined with parchment paper.

Roast in the oven for 30 minutes or until the tomatoes are soft and caramelized.

Pour the roasted tomato mixture into a large pot and add the vegetable broth. Bring to a boil, then let it simmer for 10-15 minutes.

Use an immersion blender to blend everything until smooth.
