How To Make Harvest Vegetable Soup
A hearty and comforting soup filled with seasonal vegetables, perfect for a cozy autumn meal.
Serves:
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 sweet potato, peeled and chopped
- 2 cups butternut squash, peeled and chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 4 cups vegetable broth
- 1 cup water
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until soft, about 5 minutes.

Add carrots, sweet potato, butternut squash, thyme, and oregano. Cook for another 5 minutes.

Add vegetable broth and water and bring to a boil. Reduce heat to low and let simmer for 20 minutes.

Use an immersion blender to blend soup until smooth. (Alternatively, let soup cool slightly and blend in batches in a blender).

Season with salt and pepper to taste. Serve with fresh parsley.
