Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 lb chestnuts, peeled and chopped
- 4 cups chicken or vegetable broth
- 1 sprig fresh thyme
- Salt and black pepper to taste
- ½ cup heavy cream
Instructions

Heat oil in a large pot over medium heat.

Add onions and garlic, sauté until translucent.

Add chestnuts, broth, thyme, salt, and pepper.

Bring to a boil and simmer for 30 minutes.

Discard thyme and puree until smooth.

Return soup to the pot and add heavy cream.

Reheat gently and serve.
