Serves:
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 tbsp vegetable oil
- 1 cup cooked chicken, shredded
- 1/2 cup onion, finely diced
- 1/2 cup carrot, finely diced
- 1/2 cup celery, finely diced
- 2 cloves garlic, minced
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper, to taste
- 2 cups chicken broth
Instructions
-
In a large bowl, combine the flour, baking powder, and salt. Mix well.
-
In a small bowl, whisk together the milk and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
-
On a floured surface, roll out the dough to about 1/4 inch thickness. Cut into small squares or circles using a cookie cutter or knife.
-
In a large pot, heat the chicken broth over medium heat. Add the shredded chicken, onion, carrot, celery, garlic, parsley, thyme, and rosemary. Season with salt and pepper.
-
Bring the broth to a simmer and then drop the dumplings into the pot, one by one. Cook for about 15 minutes, or until the dumplings are cooked through and the vegetables are tender.
-
Serve hot and enjoy!
