Ingredients
- 1 tbsp olive oil
- 1 cup diced ham
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups chicken broth
- 4 cups diced potatoes
- 1 cup frozen corn
- 1 cup milk
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley, for garnish

In a large pot, heat olive oil over medium heat. Add diced ham, onion, and garlic. Cook until onion is translucent and ham is lightly browned.

Add chicken broth, diced potatoes, and frozen corn to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.

Use a potato masher to partially mash the potatoes in the soup, leaving some chunks for texture.

Stir in milk and heavy cream. Season with salt and pepper to taste. Simmer for another 5 minutes.
