- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, sliced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 2 tsp curry powder
- 1 tsp turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, for garnish

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until they become translucent.

Add the carrots, bell pepper, zucchini, and mushrooms to the pot. Cook for another 5 minutes, until the vegetables start to soften.
