Ingredients
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tsp curry powder
- 1 can (400g) sweetcorn, drained
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Heat vegetable oil in a large pot over medium heat. Add diced onions and minced garlic, and sauté until onions are translucent.

Add the curry powder and sauté for an additional minute to release the flavors.

Add the sweetcorn to the pot and stir well to combine with the spices.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.

Using an immersion blender or a regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the coconut milk. Season with salt and pepper to taste.

Simmer for another 5 minutes to allow the flavors to meld together.
