Ingredients
- 4 potatoes, peeled and chopped
- 1 onion, chopped
- 4 cups of chicken broth
- 2 cloves of garlic, minced
- 1 tsp of dried thyme
- 1 tsp of salt
- 1/4 tsp of black pepper
- 1 cup of heavy cream
- 1/4 cup of chives, chopped
- Optional toppings: shredded cheese, crumbled bacon
Instructions

Add potatoes, onion, chicken broth, garlic, thyme, salt, and pepper to a crockpot.

Cook on low heat for 7 hours.

Use an immersion blender to puree the soup until smooth.
