  • 2 heads of broccoli, florets only
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • 2 tbsp of olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

  2. Add the broccoli florets to the pot and cook for 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, until broccoli is tender.
