Ingredients
- 2 courgettes, chopped
- 2 medium potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup grated cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish

In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until softened.

Add the courgettes and potatoes to the pot and cook for about 5 minutes, stirring occasionally.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 20 minutes or until the vegetables are tender.

Using an immersion blender or a regular blender, blend the soup until smooth.

Return the soup to the pot and stir in the grated cheddar cheese until melted and creamy.
