Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn kernels, drained
- 1 cup vegetable broth
- Salt and pepper to taste
- Chopped fresh cilantro, for garnish
Instructions

In a large pot, heat olive oil over medium heat. Add onion, garlic, red bell pepper, and jalapeno pepper. Cook until vegetables are softened, about 5 minutes.

Add cumin, chili powder, paprika, and cayenne pepper (if using). Stir well to coat the vegetables with the spices.

Add diced tomatoes, black beans, corn kernels, and vegetable broth to the pot. Season with salt and pepper to taste. Bring to a boil, then reduce heat and let simmer for 20 minutes.

Serve hot, garnished with chopped fresh cilantro.
