Ingredients
- 4 large onions, sliced
- 2 tbsp butter
- 2 tbsp olive oil
- 2 cups apple cider
- 4 cups vegetable broth
- 1 tsp thyme leaves
- Salt and pepper, to taste
- 4 slices of baguette
- 1 apple, thinly sliced
- 1 cup shredded cheese (cheddar or gruyere)
Instructions

In a large pot, melt butter and olive oil over medium heat. Add sliced onions and cook until caramelized, stirring occasionally for about 25 minutes.

Add apple cider, vegetable broth, thyme leaves, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

Meanwhile, preheat the broiler. Place baguette slices on a baking sheet and top with apple slices and shredded cheese. Broil until the cheese is melted and bubbly.

Using an immersion blender or regular blender, blend the soup until smooth. Season with additional salt and pepper if needed.
