  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant.

  2. Add diced carrots, celery, red bell pepper, and zucchini to the pot. Cook for 5 minutes, stirring occasionally.

  3. Pour in vegetable broth and diced tomatoes (including the juice). Bring to a boil, then reduce heat to low and simmer for 15 minutes.

  4. Add corn kernels, chopped green beans, dried thyme, and dried oregano to the pot. Season with salt and pepper to taste. Simmer for another 10 minutes or until vegetables are tender.
