How To Make Sweetcorn Chowder

Ingredients
- 2 cups sweetcorn kernels
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup milk
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

In a large pot, melt butter over medium heat. Add diced onion, red bell pepper, and minced garlic. Cook until vegetables are tender.

Stir in all-purpose flour until vegetables are coated. Cook for 1-2 minutes.

Slowly add vegetable broth, stirring constantly to prevent lumps. Bring to a simmer.

Add sweetcorn kernels and dried thyme to the pot. Season with salt and pepper to taste. Cook for 10-15 minutes, until corn is tender.

Stir in milk and simmer for an additional 5 minutes.

Serve hot, garnished with fresh parsley.
