How To Make Prawn Chowder with Mashed Potato
Serves:
Ingredients
- 1 pound of prawns, peeled and deveined
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 2 tablespoons of butter
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 2 potatoes, peeled and diced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
-
In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Cook until the vegetables are tender, about 5 minutes.
-
Add the potatoes and chicken or vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are cooked through, about 15-20 minutes.
-
While the soup is simmering, season the prawns with salt and pepper. In a separate pan, heat some oil and cook the prawns until pink and cooked through, about 2-3 minutes per side.
-
Using a potato masher or a fork, mash the potatoes in the pot to thicken the soup. Stir in the heavy cream and cooked prawns. Cook for an additional 5 minutes, until heated through.
-
Season the chowder with salt and pepper to taste. Serve hot, garnished with fresh parsley.
