Ingredients
- 2 carrots, peeled and diced
- 2 potatoes, peeled and diced
- 1/2 small cabbage, thinly sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley, for garnish

Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté until fragrant.
