  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, peeled and chopped
  • 2 garlic cloves, minced
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and carrots, and cook until softened, about 5 minutes.

  2. Add the minced garlic and cook for an additional minute.

  3. Rinse the lentils under cold water until the water runs clear. Add them to the pot along with the vegetable broth, cumin, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.

  4. Use an immersion blender or transfer the soup to a blender, and blend until smooth and creamy.

  5. Ladle the soup into bowls and top with crumbled feta cheese and fresh cilantro leaves.

  6. Serve hot and enjoy!
