- 2 cups broccoli florets
- 1 cup frozen peas
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup ricotta cheese
- 1/4 cup fresh mint leaves
- Salt and pepper, to taste

In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.

Add the broccoli florets, frozen peas, and vegetable broth to the pot. Bring to a boil and then reduce heat to a simmer. Cook until the broccoli and peas are tender, about 10-15 minutes.

While the soup is cooking, prepare the minty ricotta. In a small bowl, mix together the ricotta cheese and chopped fresh mint leaves. Season with salt and pepper to taste.
