Ingredients
- 1 lb beef stew meat, cut into bite-sized pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 carrot, diced
- 1 celery stalk, diced
- 1/2 cup barley
- 4 cups beef broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.

Add the sliced mushrooms, diced carrot, and diced celery to the pot. Cook until the vegetables are slightly softened.

Return the beef stew meat to the pot. Add the barley, beef broth, bay leaf, and dried thyme. Season with salt and pepper to taste.

Bring the soup to a boil, then reduce heat to low and simmer for about 1 hour, or until the beef is tender and the flavors have melded together.

Remove the bay leaf from the soup before serving. Garnish with fresh chopped parsley.
