Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 potato, peeled and diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 can cannellini beans, drained and rinsed
- 1 tsp dried basil
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic and cook until softened.

Add carrot, celery, and potato and cook for 5 minutes.

Pour in vegetable broth and bring to a boil.

Stir in diced tomatoes, kidney beans, cannellini beans, dried basil, salt, and pepper.

Reduce heat and simmer for 20 minutes.

Serve hot.
