How To Make Lentil and Vegetable Bean Soup
A hearty and healthy soup filled with lentils, veggies, and beans. Perfect for a cold day.

Ingredients
- 1 cup green lentils, rinsed and drained
- 1 can mixed beans, drained and rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 celery stalks, chopped
- 2 carrots, peeled and chopped
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions

In a large pot, heat olive oil over medium heat. Add onion and garlic, cook until onion is translucent.

Add celery and carrots and cook until softened, about 5 minutes.

Add lentils, mixed beans, vegetable broth, cumin, and paprika.

Bring to a boil and then reduce heat to low and let simmer for 30 minutes or until lentils are tender.

Season with salt and pepper to taste.
