Ingredients
- 1 cup of barley, rinsed
- 2 carrots, diced
- 2 celery ribs, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are softened.

Add barley, vegetable broth, diced tomatoes (with juice), thyme, oregano, salt, and pepper. Bring to a boil. Reduce heat, cover, and simmer for 1 hour or until barley is tender.
