Ingredients
- 1 lb ham, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- 4 cups chicken broth
- 2 cups water
- 2 cans (15 oz each) white beans, drained and rinsed
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium heat. Add the diced ham and cook until lightly browned.

Add the chopped onion, carrots, celery, and minced garlic to the pot. Cook, stirring occasionally, until the vegetables are tender.

Add the bay leaf, dried thyme, chicken broth, and water to the pot. Bring to a boil, then reduce heat and simmer for 1 hour.

Add the drained and rinsed white beans to the pot. Simmer for an additional 30 minutes.

Remove the bay leaf from the soup and season with salt and pepper to taste.
