Ingredients

  • 2 lbs beef bones
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves of garlic
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon salt
  • 8 cups water

Instructions

  1. Preheat oven to 400°F (200°C). Place beef bones on a baking sheet and roast for 30 minutes.

  2. In a large pot, add the roasted beef bones, onion, carrots, celery, garlic, bay leaves, peppercorns, salt, and water.

  3. Bring the pot to a boil over high heat, then reduce the heat to low and simmer for 4 hours, skimming off any foam that rises to the surface.

  4. After 4 hours, strain the stock through a fine mesh sieve, discarding the solids.

  5. Allow the stock to cool, then refrigerate overnight. Remove any solidified fat from the surface before using.

  6. Use the beef stock as a base for soups, stews, and sauces.
