Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- Salt and pepper, to taste
- 2 tbsp cilantro, chopped
Instructions

Add all ingredients (except cilantro) to a slow cooker and stir to combine.

Cover and cook on low for 6 hours, or until sweet potatoes are tender.

Stir in chopped cilantro before serving.
