Ingredients
- 1 cup of red lentils, rinsed
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tbsp of ginger, grated
- 1 tsp of turmeric powder
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- 1/2 tsp of cayenne pepper
- 1 can of diced tomatoes
- 2 cups of vegetable broth
- 1 can of coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

In a slow cooker, combine red lentils, onion, garlic, ginger, turmeric powder, cumin powder, coriander powder, cayenne pepper, diced tomatoes, and vegetable broth.

Cook on high for 3-4 hours or until the lentils are tender.

Stir in coconut milk and let cook for an additional 15-20 minutes.

Season with salt and pepper to taste.

Serve hot over rice or with naan bread. Garnish with fresh cilantro.
