A savory and filling vegan pilaf that is easy to make in a slow cooker.

Ingredients
- 1 cup wild rice, rinsed and drained
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup sliced mushrooms
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp thyme
- salt and pepper to taste
Instructions

In a slow cooker, add wild rice, onion, garlic, mushrooms, vegetable broth, olive oil, thyme, and salt and pepper.

Stir to combine.

Cover and cook on high for 4 hours or on low for 6 hours.

Once cooked, stir and adjust seasoning as desired.
