Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 can of chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 small onion, minced
- 3 cloves of garlic, minced
- 1 tsp of ginger, grated
- 1 can of coconut milk
- 2 tbsp of tomato paste
- 1 tbsp of curry powder
- 1 tsp of ground cumin
- Salt and pepper to taste
- Fresh cilantro, chopped for serving
Instructions

In the slow cooker, add in all the ingredients except the cilantro and stir to combine.

Cook on high for 4-6 hours until sweet potatoes are tender.
