- 1 onion, diced
- 3 cloves garlic, minced
- 3 large carrots, chopped
- 1 large sweet potato, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1 cup couscous
- Chopped fresh parsley for garnish
Instructions

In a slow cooker, combine all vegetables, chickpeas, diced tomatoes, and vegetable broth.

Stir in all spices and seasonings.
