- 1 can full-fat coconut milk
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 bell peppers, chopped
- 2 cups chopped sweet potato
- 1 cup chopped carrots
- 1 cup chopped cauliflower
- 1 cup vegetable broth
- 2 tbsp curry powder
- 1 tsp ground ginger
- 1 tsp turmeric
- salt and pepper, to taste
- fresh cilantro, for garnish
Instructions

In a slow cooker, add the coconut milk, onion, garlic, bell peppers, sweet potato, carrots, cauliflower, vegetable broth, curry powder, ginger, turmeric, salt, and pepper. Stir to combine.
