How To Make Slow Cooker Spiced Root & Lentil Casserole

Ingredients
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 1 sweet potato, peeled and chopped
- 1 cup dried lentils, rinsed and drained
- 3 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Place the diced onion, carrots, parsnips, sweet potato, lentils, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and pepper in the slow cooker.

Stir well to combine all the ingredients.

Cover and cook on low heat for 6 hours or on high heat for 3-4 hours, or until the vegetables and lentils are tender.

Serve hot, garnished with fresh cilantro.
