How To Make Slow Cooker Beef Barley Soup

Ingredients
- 1 lb beef stew meat, cut into bite-sized pieces
- 1/2 cup barley
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a slow cooker, combine beef, barley, onion, carrots, celery, and garlic.

Pour beef broth over the ingredients and add the bay leaf and dried thyme. Season with salt and pepper.

Cover the slow cooker and cook on low heat for 8 hours or until the beef is tender and the barley is cooked through.

Remove the bay leaf and adjust the seasoning if needed.

Ladle the soup into bowls and garnish with fresh parsley.
