- 1.5 lbs boneless skinless chicken breasts
- 1 cup baby carrots
- 1 cup cherry tomatoes
- 1 cup sliced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Instructions

In a slow cooker, add chicken breasts, baby carrots, cherry tomatoes, bell peppers, onions, and garlic.

In a small bowl, whisk together chicken broth, balsamic vinegar, honey, dried thyme, salt, and black pepper. Pour over the chicken and vegetables in the slow cooker.

Cover the slow cooker and cook on low heat for 4 hours or until the chicken is cooked through and tender.
