Ingredients
- 1.5 lbs beef stew meat, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 2 tbsp vegetable oil
- 3 cups beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and chopped
- 3 stalks celery, chopped
- 2 potatoes, peeled and chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

In a medium bowl, toss the beef with the flour until evenly coated.

In a large skillet over medium-high heat, heat the oil until hot. Add the beef and cook until browned on all sides, about 5 minutes.

Transfer the beef to a 6-quart slow cooker. Add the beef broth, onion, garlic, carrots, celery, potatoes, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.

Cover and cook on low for 6 hours or on high for 3-4 hours, until the beef is tender.

Discard the bay leaf. Serve hot, garnished with fresh parsley if desired.
